  • 40 young spruce twigs
  • 350 g (12 oz) sugar
  • 100

Method

Gather the fresh new twigs from any species of spruce in May or June and boil them in the water for 30 minutes. Start the yeast. Strain off the liquid and mix in the sugar and treacle while still hot. Either dark or light treacle can be used. When cool, add the yeast, allow to ferment in a bucket for 6 days, then scoop off the scum and siphon into bottles. Check daily to see the beer does not g
