Some of the best dishes have been created by accident or in an emergency. The parsley salad served here is one such dish. One night during a very busy service we ran out of appetisers, so I quickly threw together a few ingredients to make a small salad that could be served on a slice of melba toast. It was such a hit that it appeared afterwards on the menu in many variations. It can also be served in small tart cases as a canapé. You’ll need to start the lemons the day before for this dish,
