Arriving in Australia in 1970, I was surprised to discover that offal and ‘extremities’, so revered in European and Asian cooking for their flavour and texture, were discarded. How lucky for immigrants like me, who could buy all these cuts at a fraction of the price we would have paid in our home countries! Attitudes have changed with the years, and today dishes such as crumbed brains and grilled veal liver are as popular on restaurant menus as any other. These days you can also buy veal ho
