There is good reason that kladdkaka (‘sticky cake’) is Sweden’s favourite cake. It has top and bottom layers of buttery crunch holding plenty of fudgy squidge between them, almost like a giant, sharable cookie. Usually, it is made with dark chocolate and vanilla. Here white chocolate gives a toasty, caramelised butter flavour, vanilla brings complexity and black sesame seeds lend nuttiness with an earthy undertone to offset all that sweetness.
