Pears, leeks and blue cheese are a classic combination and go well together as a topping for wood-fired pizzas. A mild, soft blue cheese works well, such as Roquefort, but you can also use the harder, stronger blue cheeses, like Stilton.

Ingredients

  • 2-3 medium leeks, trimmed, washed, drained and sliced thinly
  • 30 ml /2 tbsp olive oil

Method

  1. Build the fire in the oven to a temperature of around 150°C/300°F, which will take about 30 minutes. When it is at temperature, push the fire to the back of the oven with a metal peel or coal hook.
