Waxy potatoes are needed for this topping, as they hold together better than floury potatoes. Using fresh chorizo works well in the recipe as the savoury oils ooze out into the potatoes and the base, adding a delicious intensity of flavour.

Ingredients

  • 12 quantity pizza dough
  • 125 g / oz waxy potatoes, peeled, parboiled, co

Method

  1. Build up the fire in the oven until it is about 400°C/750°F, this will take about 60 minutes. When it is up to temperature, push the fire to the back of the oven with a metal peel or coal hook and close the oven door.
