Many modern writers (including the Orcadian writer and poet, the late George Mackay Brown) have included an onion in clapshot, though there is no sign of it in Frith’s early description. The onion is usually boiled with the turnip and potatoes, but another modern variation is to cook a panful of ‘burnt’ onions.
