Fruits which are preserved in alcohol usually means cherries in brandy, prunes in Armagnac, sloes in gin … But a rum-pot is more versatile. Almost any fruit can be used and added to throughout the fruit season.

Method

Use a large, lidded stoneware pot around 4-5 litre (8-10 pint); smaller will do but gives less scope for adding. Store in a cool room, cellar or garage away from central heating.
