Moist, firm and full of flavour, this is the kind of flat round Spanish-style omelette which is cut into square chunks and served as a tapa with chilled Fino.

Method

Heat about two tablespoons of the oil in a deep 23 cm (9 in) frying pan and add the onions and salt. Cook uncovered over a low heat for about 30 minutes until they are soft, but uncoloured
