Bright and lemony, and to a certain percentage of the population soapy, even, cilantro is a staple in carne asadas. In fact, many times it is the only green available to provide a color and flavor contrast. It deserves a permanent spot on your weekly grocery list because it is so versatile as a garnish for tacos, rice, and salsas. Look for cilantro bunches with firm stems and no yellow leaves.
