Mexican-style sour cream is thinner in texture than American sour cream. It is also richer in flavor, with a natural sweetness due to its culturing process. With its buttery flavor, it steps into the realm of a crème fraîche, but because it is not as thick, it can be drizzled over food to add a cooling creaminess that hits the spot when eating lots of chiles. It is also versatile and can be used in both savory and sweet dishes, like in bionicos (a dessert parfait with fresh cream) or fresas (strawberries) con crema.
