Predominantly used in Japanese, Chinese and Korean cooking, these dehydrated umami-rich mushrooms have a rich depth. Add them to vegan stock, dashi or chicken broth along with kombu for a smoky flavour. Use the softened mushrooms to make pickles or add to stir-fries, spring rolls and soups.
