Korean chilli flakes are essential for making kimchee, bulgogi and other marinades. Made from chillies dried in the sun, they are seeded first and then roughly ground. With the seeds removed, they are not overly spicy and have a smoky, fruity taste. Use them for any dish that requires dried chillies. Itโ€™s easiest to buy them online from an Asian store or Amazon.
