Keep garlic somewhere dry and airy and, if well dried, it’ll last for several months, though it may show tendency to sprout as spring approaches. Leftover crushed or chopped garlic can be stored covered with oil in the fridge for up to a week and is good in salad dressing or stirred through wilted greens.
