There are lots of gadgets out there to help you prepare garlic but you only need a sharp knife. Cut the base off the clove, press it lightly with the flat of your knife and the skin should come off easily. Either chop finely or, to crush without the bother of a garlic crusher, sprinkle a peeled clove with coarse salt (which acts as an abrasive) and use the flat of your knife to press it down hard on a chopping board a few times, until puréed.
