Bacon fat adds a smoky flavor, flaky texture, and a unique mouthfeel to chocolate chip cookies, pie dough, whipped cream, and biscuits. I find that adding it in place of a few tablespoons of oil and/or butter adds just the right amount of smoke and salt. You definitely do not want to use all bacon fat in your baking; it would be too overwhelming. Also, when using bacon fat for pie doughs or biscuits, make sure that it is very cold, so that you can cut it into the flour just like you would with lard, shortening, or butter.
