We also like to use demerara sugar, most often for garnishing baking goods, as its large crystals add a nice textural contrast. Demerara sugar is less processed than regular granulated sugar, so some molasses is left in the sugar crystals. If you can’t find demerara sugar, look for turbinado sugar, also called sugar in the raw.
