Parchment paper is essential to the home baker. I use it to line cookie sheets, cake pans, and loaf pans. It keeps things from sticking, and it is a much less messy option than cooking sprays and other grease-containing items (in particular that horrible flour spray). If you are baking cookies, you can reuse the parchment paper at least once. I find that silicone baking sheet liners don’t produce the same kind of browning as parchment does.
