This is what we think is a fantastic cinnamon Danish that we created to replace our cinnamon roll. It has cinnamon in the dough and in the laminating butter as well as in the glaze. It is tender and tasty. The goal was to make both for a while and then to retire our more typical American cinnamon roll. We weren’t pleased with the cinnamon roll and thought something different would be more interesting than working on it. Our grand plan wasn’t going to be, however. Our guests divided 70 percent to 30 percent in favor of the cinnamon roll, a real frustration to me and Frank. Finally we gave in, fixed the cinnamon roll recipe, and retired the Cinn-Oh-Man to “special bake” status. I guess it’s in purgatory rather than heaven. There was no value in being stubborn about this one any longer.
