If there is one thing I want to be remembered by, it is pairing miso with butterscotch. It is, quite simply, spectacular. White miso paste is known for its sweet and mellow notes, as it is fermented for a shorter period and is less salty than darker varieties. These mild and almost delicate qualities make it a perfect complement to most fruits, and I often use miso as the salty component in a sweet and salty flavor bomb.
