The syrups used in this book include store-bought sweeteners, such as golden syrup and molasses; simple syrups brushed onto cakes to add moisture and sometimes flavor; and concentrated sugar syrups, a key component in Italian meringue. When weighing or measuring syrup, use a container that has been coated with nonstick cooking spray so that it is easier to remove all of the syrup.
