Be sure to use the flour specified in the recipe. Where both cake flour and all-purpose flour work, it is indicated in the recipe. If cake flour is specified and you have only bleached all-purpose flour, you will need to use the suggested amount of potato starch or cornstarch in place of some of the all-purpose flour (see Ingredient Equivalences and Substitutions).

In most layer cakes, unbleached flour will result in a sunken center. However, if you are using a tube pan, this is not a problem. Because unbleached flour is slightly higher in protein, the crust will be darker.
