Bean curd or soy bean cake is made from ground soy beans. High in protein and low in calories, it comes in several forms: fresh, dried and pickled. Fresh bean curd has a delicate flavour not found in either the dried or the pickled form.
Firm bean curd comes in pieces about 6โ€“8-cm (2ยฝโ€“3-in) squares. It is usually used for stuffing or is braised, stewed or deep-fried.
Silken bean curd is mainly steamed, scrambled or used in soups.
Dried bean curd sheets, which are sold in large pieces that need to be wiped with a damp cloth to clean and soften, are used as wrappers.
