Broths to Bannocks: Cooking in Scotland 1690 to the Present Day

By Catherine Brown

Published 1990

  • About

Very mild oniony flavour. A hardy pot-herb for growing on a window sill, they are frost resistant. Their leaves may be snipped throughout the year, if they are grown indoors, without the plants coming to any harm. They should not be cut too near the ground which might damage the growth centre. They do not withstand cooking and should be added to the broth just before serving. The flower has a special pungency and is sometimes sold with the leaves in herb packs. Use only a few of the florets to flavour they are pungent, a whole head would be overpowering.
