Queso fresco is fresh cheese (as the name indicates) made with cow’s milk that is produced all over Mexico. Other local names include queso de metate, queso molido, and queso ranchero. The cheese is used fresh, as a table cheese, crumbled as a topping, or as a stuffing for chiles or quesadillas because it melts well. It has a pleasant acidity and creaminess.
