Fresh shrimp are virtually unobtainable in most parts of the United States. Notable exceptions are areas around the Gulf of Mexico, and occasionally in Maine. But in all likelihood you will buy frozen shrimp that have been defrosted. Look for those of gray color. A pink color indicates that the shrimp have probably been dropped into boiling water briefly, then frozen. These are not recommended.
