Lobster should be fresh, and freshly killed in front of you before buying. Frozen lobster, including lobster tails, usually has a dull and uninteresting taste, while fresh lobster is sweet and juicy and has a fine, crunchy texture. The size I recommend for tenderness is 1½ to 2 pounds.
