Timing is everything for this procedure because there’s a limited time when the sugar is at the correct consistency. Nevertheless, this is caramel at its most spectacular-the results are like golden cotton candy.
The basic technique for achieving pulled sugar is to snip off the ends of a metal whisk, then dip the ends into caramel and drizzle out the thinnest strands possible over a silicone liner.
You can also use a fork, or your fingertips, to pull the strands of caramel before letting them fall onto the liner. This method is slower but you can simply reheat the caramel as necessary.
