Demerara and the soft light and dark brown sugars always have an interesting, caramelized flavor that varies in strength depending upon the color.

Paired with butter and cream and then reduced, they produce the perfect Toffee Sauce. The easiest way to use them is sprinkled over thick, creamy yogurt and let the crystals melt into a layer of caramel.
