A big investment in time and effort went into creating the custom-built maturing caves at Rogue Creamery, to ensure the right degree of cold and humidity.

Smokey Blue, one of the notable cheeses of Rogue Creamery, is the original Oregon Blue recipe (the first blue cheese made on the West Coast) that is then cold-smoked for 16 hours over hazelnut shells, giving a sweet caramel nuttiness to the sharpness of the blue.

Rogue River Blue is wrapped in local Syrah and Merlot vine leaves that have been marinated in a pear brandy. The year-long-ageing gives the flavours a big, fruity twang and a creamy dense texture. This cheese is made with late summer milk only and therefore availability is limited.
