This may be the largest sheep herd in the US with 1,200 East Friesian, of which there are 400 milkers. The farm is run by Tom and Nancy Clark along traditional lines.

Ewe’s Blue is a Roquefort-style cheese using pasteurized ewe’s milk and weighing around 1.3 kg (3 lb) with sharp blue veins mingling with the sweet earthiness of the milk. The crumbly texture is perfect as a partner to dessert pears and sweeter white wines; it is also good crumbled into a salad with toasted Pecan nuts or with ripe figs.
