This 80-hectare (200-acre) working farm was founded by nuns in the late 1980s as a place for children to enjoy the countryside and agriculture. Today the cheesemaker Colin McGrath produces award-winning cheeses with a herd of grass-fed Jersey, Guernsey, Milking Shorthorn and Brown Swiss cows as well as a small goat herd.

Sophie is a 200 g (7 oz) goat’s milk cheese available from spring to early autumn, which has a delicate alabaster pate and a soft downy white rind. The flaky, fudgy texture is fresh and tangy with a light herbaceous taste perfect for Sauvignon white wines or a lighter red.
