These have a very similar oval shape to fennel and cumin seeds, but with a slightly more ridged texture. They contain a compound called thymol, which can also be found in thyme, hence they can offer a similar taste. Ajwain can make a powerful statement though, so you only need a small amount to bring out the taste. They are great in fried snacks, such as pakora, and Indian breads.
