Miso is a rich, earthy paste made from fermented soya beans. The beans are boiled and then ground into a thick paste, with wheat, barley or rice added to it. The mixture is injected with yeast and left to ferment. There are many different grades and colours of miso, each suited to a particular recipe. Generally the lighter the colour, the sweeter and less salty the taste.
