These cooking times apply to a steak that is about 2.5 cm (1 inch) thick (the weight is irrelevant to the cooking time), has been brought to room temperature before cooking and is pan-fried in a heavy-based pan. If you want to grill your steaks, they will take about a minute longer.

For a blue steak (top), cook for 1–2 minutes per side: the steak will feel fleshy and soft when pressed. For rare, cook for 2–3 minutes per side: the steak will spring back a little when pressed. For medium, cook for 3–4 minutes per side: the steak will spring back when pressed. For welldone (bottom), cook for 4–5 minutes per side: the steak will feel very firm.
