This is also called sticky rice or sold as Japanese sushi rice, Korean rice or black sweet rice and may be either white or black. It is a sticky, short-grained rice used in Asian cooking. Its name is purely a description of texture as rice does not contain gluten. Once cooked, the grains stick together, making it suitable for using in sushi or for eating with chopsticks. Use for sweet and savoury dishes.
