Also sold as Griotto rice, this has a distinctive nutty flavour and chewy texture. It is good with duck and game. It is a medium- to short-grain rice grown in the Camargue region of southern France. Other red rices include Thai and Bhutanese red rice and Vietnamese red cargo.
