  • About
White asparagus is cut while the asparagus is below the ground (the lack of light prevents it from producing chlorophyll and turning green). It is more tender than the green variety and is popular in parts of Europe. Before cooking, white asparagus needs to be peeled up to the tip as the skin is tough.
