Salsa means ‘sauce’ in Italian and Spanish, but it is also the South and Central American cooking term for the mixture of chopped vegetables that falls somewhere between a sauce and a salad. This is illustrated by the fact that traditional ltalian salsa verde is made with parsley, capers, anchovies, oil and vinegar, while the Mexican version is made with chopped green tomatoes, chillies, onion and coriander.
