Tahini is a thick oily paste extracted from white sesame seeds. The seeds are husked by crushing and soaking, then dried and lightly roasted before being ground into a thick paste or cream. Tahini is used in dips or blended with garlic and lemon and used as a dressing for roast vegetables. It can be made by grinding seeds in a blender or using a mortar and pestle until smooth, or can be bought both as light and dark pastes.
