- Force the dough into a cylindrical shape by folding the top down over the rest of the dough as though making a baguette (above).

- Continue rolling the cylinder until it has the shape of a large baguette.

- Use a knife or bench scraper to cut the dough into slices.

- Roll each slice in your hands to form a ball.

- Pull the dough down the sides of the ball and pinch it at the bottom to form a tight ball.

- Cover the rolls with plastic wrap and let rise in a warm place.
