Nuts provide flavor, tenderness, and textural variety in many cookie recipes. Try to purchase nuts in vacuum cans or in a store where you can taste them to be sure they are fresh and sweet-tasting, not rancid. Nuts should be stored in a plastic bag in the freezer. For best results, bring the nutmeats to room temperature before grinding them.
To blanch almonds or pistachios, bring them to a boil in a pan of water and drain. Rub the nuts in a coarse-textured towel to loosen the skins, then go over each one to separate the nuts from the skins. Place blanched nuts on a jelly roll pan and dry them out in a 300 degree oven for about 5 to 10 minutes (don’t let them color) and cool before using.
