Ambergris (‘anbar) is a waxy, grayish substance produced in the intestines of sperm whales, and found floating at sea or washed ashore. It is valued for its scent, and is added to perfumes to slow down evaporation. In the medieval Baghdadi kitchen, it was used mostly to fumigate food and cooking utensils to get rid of unpleasant odors. As to internal use, it was incorporated into confectionery in small amounts. It was also believed to strengthen the heart and brain. A small amount of it mixed with a glass of wine would induce fast intoxication (Ibn Sina).
