A yellow, orange, or red fruit with a large pit, thin skin, and a sweet, peachlike flavor. Mangoes ripen best in a closed brown paper bag at room temperature. When ripe, they have brown spots and are soft to the touch. Mangoes secrete a fluid that can cause an allergic reaction in some people, so it is a good idea to wear rubber gloves when peeling and cutting up the fruit, and wash your hands after touching them. They are used in drinks, ice cream, sorbet, salads, mousses, marmalade, and other dishes.
