Ingredients Wheat flour; spinach, chard, or other greens; ricotta; grated cheese; sometimes eggs; and spices.

How Made Boiled greens, squeezed dry and finely chopped, are kneaded with flour, ricotta, grated cheese, spices, and eggs. Tiny dumplings are formed from the dough, then floured and dropped in boiling salted water and drained as soon as they float.

Also Known As Malfatti, ravioli gnudi, and strozzapreti (see entry for strangolapreti, strozzapreti).

How Served As pastasciutta, with both meat and meatless sauces.
