How Made The potatoes are boiled and riced while still warm. The spinach is boiled separately, then squeezed and finely chopped. Cold potatoes and spinach are kneaded with sifted flour and eggs. It is not necessary to leave the dough to rest. Small pieces of dough are pinched off and rolled between the hands to make little logs about β…œ inch (1 cm) in diameter. These are cut on the bias into lengths of about ΒΎ inch (2 cm), which are boiled briefly in salted water and drained as soon as they float.
