Canard Sauvage—Wild Duck (Mallard): This is the largest of the birds grouped under the heading of water fowl. Suitable preparations: à la Broche, à la Bigarade, à l’Orange, en Salmis and most of the preparations for Rouen Duckling.

Sarcelle—Teal: This bird is a smaller species of the Mallard. The common teal can be distinguished by its eyes which are framed in white; one of its varieties the Garganey has only a fleck of white under the eyes shaped something like a comma. Suitable preparations: à la Broche, à l’Orange, en Salmis, en Chaud-froid.
