The Cabbage Leaf Trick

This is my preferred way of pushing down the ferments in the jar, using the natural material that you already have to hand.

Put a leaf of cabbage on top of the vegetables in the clip-top jar.

Now push down the peeled stalk of your cabbage. The stalk should be tall enough to come just above the opening so that the jar lid pushes it down.

Push the lid down tightly to seal. You can also add a sterilised stone or even a small clean glass to push down the vegetables further if you don’t have a big enough stalk.
