Any person who intends to cook well must have access to fresh herbs. They will be the key that takes a creation to the next level. Our cooking would be a shell of what it is without them. Bunches of flowering herbs adorn our kitchen counters and tablescapes, to pluck at arm’s reach, to complete everything from dainty starters to bowls of ice cream.
Over time, herbs seem to have convinced generations that they only go with certain foods: mint with lamb, basil with tomatoes, and thyme with mushrooms. This was decided by one person, at one point in time, and a few others agreed. How crazy is that?!
