The basic American pancake (also called a flapjack, slapjack, griddle cake, or hotcake) is a flat, round breadstuff made from a simple batter that blends flour, milk, and eggs. The batter is poured onto a lightly greased griddle or into a skillet and the cake is flipped over when the underside is done. American pancakes are most commonly made from wheat flour, buckwheat flour, or cornmeal; like other quick breads, they lend themselves to additions such as berries and other fruits. A pat of butter along with maple or another sweet syrup are traditional accompaniments. More elaborate toppings include whipped cream and fresh fruit.
